Cucumber Apple Mint Salad

Ingredients

  • 4 med. cucumber, peeled and diced
  • 1 med. apple, grated or diced
  • ¼ c. Fat Free plain yogurt
  • 1 med. lemon, juiced
  • 12 mint leaves, thinly sliced
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine cucumber, apple, yogurt, lemon juice, and mint.
  2. Stir well to mix.
  3. Add salt and pepper to taste.
  4. Chill until serving.
  5. Makes 4 servings of 3/4 cup each
